Ingredients: Korean radish -1 Sugar, salt, white vinegar - 2 tablespoons each
Directions: Slice the radish into uniform squares or strips. Sprinkle salt and sugar and toss the radish gently. Add vinegar to it. Use 1:1:1 ratio for salt, sugar and vinegar. Let it sit for 15 minutes before serving. Delicious Korean pickled radish is ready!
Daikon soup with tofu mushroom
Ingredients: Dried mushrooms- 1 ounce Chicken or vegetable broth OR Dashi - 4 cups. Radish -1 Celery-1 stalk Silken tofu - 8 ounces Minced Chile oil, Cilantro, Sesame oil, finely chopped green onions for garnishing.
Directions: Pour half cup of boiling water over the mushrooms in a small bowl for 15 minutes. Roughly chop the mushrooms after lifting them up from the water. Reserve the soaked liquid. In the meantime, bring the broth to a simmer. After peeling and slicing the radish, add it to the broth . Thinly slice the celery and add that as well. Cook for 5 minutes until they are tender. Cut tofu into thin slices or small cubes. Add the mushroom and tofu into the pot. Now pour the soaked liquid into the pot simmering it well for about 2 to 3 minutes. Serve it immediately into a bowl and garnish it with chopped green onions, cilantro, sesame oil and Chile oil.
Directions: Blend the soaked Thai rice (6 hours of soaking required) using a blender. Mix rice flour (100g) to the blended rice without any lumps. Keep it aside. Stir fry garlic and shallots by heating some oil in a pan. Add mushrooms and prawns and stir fry for 2-3 minutes. Add mince and gammon steak and stir fry for another 3-4 minutes until it is fully cooked. Put everything on a plate. On the same pan, cook the radish with all the seasonings. Now add the mince garnish with the cooked radish and mix them well. Add water if you feel the mixture is dry. Next, steam the cake using a steamer for about 45 minutes. Remove the cake only after it has cooled down. Heat the pan, add some oil and fry the cake until it becomes brown. Serve it with sweet chili sauce or soy sauce.
